Sopa de Queso (Cheese Soup)
  • 7 Green Onions
  • 1 TBSP Butter
  • 5-6 sm. Potatoes - peeled and cut into small pieces
  • 3 C. Water
  • Milk (as needed)
  • Salt & Pepper
  • 2 TBSP Vegetable Oil
  • Chopped pieces of Cheddar (as much as desired)
  • 1 C. Spaghetti Noodles cut into small pieces
Directions:
Chop green onions into small pieces, put one cup of water to boil and add the onions with the butter, bring to a boil. Add potatoes, bring to a boil again, add salt pepper and the rest of the water. Bring that to a boil, now add the milk (enough to fill the pot, usually one of a 4 litre bag). Bring to a boil, add oil. Once it has boiled for 5 to 10 minutes add noodles, bring heat to medium. Soup is done when noodles are done. Serve hot - add cheese when you serve it, and you may also add some to the pot.

Comments:
You may add cheese to the pot of soup, but if you want to save for next day it will not taste that good. It is better to add the cheese when you serve it individually, you may substitute cheddar with mozzarella, and any other cheese that melts good. Very good for children!! My mother in law taught it to me, because it is easy, tasty and good! I hop you all enjoy it as much as my family does.
