  Soups & Stews

Heather's Mexi Chili
  • 2 Lbs. Ground Beef (lean)
  • 1 Can Whole Kernel Corn (drained)
  • 1 - 16 oz. Can Hot Chili with Beans
  • 1 Lg. Can Tomato Juice
  • 1 Pkg. Taco Seasoning
  • Chili Powder to Taste
  • 1 Medium Onion (chopped)
  • 2 Green Bell Peppers
  • 1/2 Can of Budweiser or Pabst Blue Ribbon Beer
  • Salt & Pepper To Taste
  • 1 Tsp. Dried Oregano
  • Pinch of Cumin
Directions:
Brown ground beef with onions and peppers until fully cooked then mix all ingredients into a large dutch oven and let simmer about 3 - 4 hours and enjoy. It's so simple. We like to serve it with tortilla chips.

Comments:
TIP: You could do a spoonful of sour cream on top or you could garnish with fresh green onions .. the possibilities are endless. Enjoy!

Heather
