Zucchini Cake
  • 3 Cups grated zucchini
  • 1 Cup vegetable oil
  • 4 Eggs
  • 3 Cups sugar
  • 3 Cups flour
  • 1 1/2 Tsp. cinnamon
  • 1/2 Tsp. salt
  • 2 Tsp baking powder
  • 2 Tsp baking soda
  • 1 Cup nuts
  • 1/2 Cup raisins
Directions:
Grease and flour 2 loaf pans or 1 angel food cake pan. Mix first four ingredients. Add the dry. Mix well. Stir in nuts and raisins. Bake at 300 ° for 1 1/2 hours.

Comments:
This cake keeps very well and is a great treat to take on a camping trip. If wrapped well, will keep in the freezer for several months. (You can take it out of freezer, cut off a slice, and wrap back up and stick it back in freezer. Great for unexpected guests or a late night snack!)
