- 3 Cups grated zucchini
- 1 Cup vegetable oil
- 4 Eggs
- 3 Cups sugar
- 3 Cups flour
- 1 1/2 Tsp. cinnamon
- 1/2 Tsp. salt
- 2 Tsp baking powder
- 2 Tsp baking soda
- 1 Cup nuts
- 1/2 Cup raisins
Directions: Grease and flour 2 loaf pans or 1 angel food cake pan. Mix first four
ingredients. Add the dry. Mix well. Stir in nuts and raisins. Bake at
300 ° for 1 1/2 hours.
Comments: This cake keeps very well and is a great treat to take on a camping
trip. If wrapped well, will keep in the freezer for several months.
(You can take it out of freezer, cut off a slice, and wrap back up
and stick it back in freezer. Great for unexpected guests or a late
night snack!)
