- 2 Oz. Olive Oil
- 4 Medium - Large Potatoes
- 2 Medium Onions
- 1 Large Green Pepper
- 1 Tsp. Garlic, Minced
- 1/4 Lb. Cheddar Cheese
- 8 Slices Pre-Cooked Bacon
- 8 Eggs
Directions:
Cook potatoes in olive oil until nearly done, add green pepper, stir. Add onions and minced garlic, stir until cooked. Add cheese, stir and smooth out. Add 8 beaten eggs, sprinkle crisp bacon on top, cover and heat on low until solidified. After cooling, cut in shape of pizza slices.
Comments:
This is great re-heated in microwave; so an easily made dish before leaving for your camping trip.
